From à la carte to rice table
At a traditional Indonesian meal, white rice is the basis. This rice is not only nutritious but has a soothing and softening effect on spicy and hot dishes.
Originally, a fish or meat dish was eaten with this rice, seasoned and flavored with sambal. This is a thick puree of fresh red peppers.

They are appreciated by our guests but also by culinary reviewers. For example, our restaurant was number 1 in the Rice Table test of “het Parool”.

The story behind the rice table
Where does the term ‘rice table’ come from? There is a story that the word ‘table’ refers to the long list of ingredients needed to prepare such an enormous variety of dishes. Another version tells that the origin lies in the ‘rice table’ used by Dutch families in the former Dutch East Indies.
In colonial times such a simple meal was not sufficient to satisfy the appetite of the Dutch planters. That is why more and more variations on dishes were added. This led to a multitude of tasty dishes of all kinds: the contemporary and richly filled rice table.

Wine or beer?
If you think that one does not drink wine with Indonesian food, you are wrong! Drinking wine is not an Indonesian custom, but neither is drinking beer.
Yet many people think that beer is the ideal companion for spicy food, because it has an extinguishing effect. White rice does that much better.
For your reassurance: of course we serve beer too!
At Indrapura you will discover that a large number of wines are extremely suitable to complement and enrich the delicious taste of Indonesian dishes.
Our wine list was drawn up especially for this purpose. Intensive testing and comparing has led us to recommend wines that go well with our dishes.
To make it easy for you, we allocated a code to the wines that corresponds to the code for the spiciness of the dishes.
Cool, red wine as a guide
During extensive testing under different conditions, we made another, surprising discovery.
Red wine drunk at a slightly cooler temperature than the usual 18 ° Celsius is a better companion to some more spicy dishes.
We therefore serve our red wines significantly cooler than you are used to. Experience how surprisingly enjoyable that is! If you prefer red wine at ‘normal’ temperature, you can have it that way.
